Either way, these waffles boast a tantalizing blend of flavours that will leave your taste buds singing praises and your body satisfied from a nutrient dense meal.

Ingredients
  

  • 2 cups spelt flour can use all-purpose
  • 4 tbsp organic cane sugar
  • 4 tsp baking powder
  • 2 farm fresh eggs
  • cups milk
  • 6 tbsp salted butter
  • splash homemade vanilla extract

Instructions
 

  • Preheat your waffle iron and spray it with a cooking spray if needed.
  • Melt your butter in a saucepan or in the microwave. Once melted, pour into a small bowl and whisk in eggs, milk and vanilla and set aside.
  • In a large bowl whisk together the dry ingredients – flour, sugar, and baking powder. Using the back of a wooden spoon, make a well in the center.
  • Pour the wet ingredients into the well. Whisk until blended but be careful not to over mix. The batter should be lumpy.
  • Ladle the batter onto the preheated waffle iron, spreading it evenly. Close the waffle iron and cook until the waffles are golden with crispy edges.
  • Once finished, transfer the freshly baked Belgian waffles onto a plate and top with your favorite toppings. See notes for ideas.
  • If not using all the batter today, store in an airtight container for up to 7 days, making weekday breakfast faster or simply make all the waffles and freeze the ones you don't eat. Flash freeze in a single layer on a cookie sheet before transferring to a freezer bag.

Notes

  • Drizzle with pure Canadian maple syrup or some delicious home canned blueberry syrup for a touch of decadence.
  • Pair with a dollop of fresh whipped cream or a scoop of vanilla ice cream.
  • Serve with some fresh summer fruit sprinkled with some icing sugar for a complete sensory experience.
