Ingredients

  • 2 tbsp of butter
  • 2 tbsp of flour
  • 1 cup broth chicken, beef, or vegetable
  • 1 cup of meat dripping from roasted meat
  • Salt and pepper to taste

Instructions

  • Collect the drippings: After cooking your meat (such as roast chicken or beef), carefully pour the drippings into a heatproof container, leaving behind any large solid bits. Skim off excess fat if necessary.
  • Make a roux: In a medium skillet or saucepan, melt the butter over medium heat. Once melted, sprinkle in the flour and whisk continuously until it forms a smooth paste (about 2-3 minutes). Cook until the roux turns a golden-brown color, adding richness and depth to the gravy.
  • Add drippings and broth: Slowly whisk in the meat drippings followed by the broth. Start with 1 cup of broth and add more if you want a thinner gravy. Continue whisking to avoid lumps, and bring the mixture to a gentle simmer. If you don’t have enough drippings simply top up the measuring cup with broth to ensure the right amount of liquid is added.
  • Thicken and season: Allow the gravy to simmer for 5-7 minutes, stirring frequently, until it thickens to your desired consistency. Taste and adjust seasoning with salt and pepper.
  • Serve and enjoy: Pour the gravy over your favorite meat, mashed potatoes, or vegetables, and enjoy!

Notes

  • If you have more drippings than this recipe calls for simply store it in an air tight container in your fridge for up to 2 weeks to make more fresh gravy whenever you like.
  • This recipe can easily be double to make more.
  • Looking for extra flavor – add in a few drops of Knorr Bovril concentrate for an extra flavorful gravy.
