Ingredients
  

Filling

  • 1 cup roughly chopped rhubarb
  • 1 cup mixed strawberry and blackberries
  • ½ cup cane sugar
  • 2 tbsp white flour
  • 1 tbsp lemon juice

Crumble top

  • ¾ cup white flour
  • ½ cup brown sugar
  • ½ cup oats
  • ½ cup butter at room temp

Instructions
 

  • Start by roughly chopping the rhubarb and any large berries. Add to a medium-sized bowl. Preheat the oven to 375 °F
  • Add sugar, flour and lemon juice to the bowl and mix well. Everything should be coated in the sugar and flour mixture. Pour into a small baking dish like a pie plate or 5 x 5 pan.
  • In a small bowl add the flour, brown sugar and oats for the topping. Cut in the room temperature butter with a fork or pastry cutter. The mixture should be clumpy when done.
  • Sprinkle the topping mixture on top of the berries in the baking dish. It will be thick.
  • Bake in a pre-heated oven for 30 minutes. It should be golden and bubble when done. Let rest for a few minutes before serving warm.

Notes

  • This crumble recipe can be used with strawberries, raspberries, blackberries, or blueberries. Mix it up to your taste or what you have in the garden.
  • Serve with homemade whipped cream for an extra special treat.
