  • Once the dough is thaw bring to room temperature by placing it on the counter for 30 minutes.

Prepare the Filling

  • Shed the cheese and cut up any additional toppings your family likes.
  • Open your homemade jar of pizza sauce (or store-bought)

Roll the Dough

  • Lightly flour your work space
  • Divide 1 ball of dough into 6 equal smaller balls- or the best size that fits your family needs.
  • Roll each ball to about 6-7" in diameter. Be careful not to roll the dough too thin as it might tear.

Fill the Panzerotti

  • Spread about 1-2 tablespoons of marinara sauce onto half of each dough circle, leaving a ½-inch border around the edge.
  • Add 5-6 slices of pepperoni and a generous ¼ cup of shredded mozzarella cheese on top of the sauce. Or use whatever topping you choose. Be sure not to over-fill to prevent the top from ripping.

Prepare the Egg Wash

  • In a small bowl, beat the egg and 1tbsp of water to create the egg wash.
  • Brush the inside edge of each panzerotti on the opposite side as the toppings.

Seal the Panzerotti

  • Fold the dough over the filling to form a semi-circle. Pinch the edges together tightly, then crimp them with a fork to seal completely.
  • Repeat with the remaining dough circles and filling.
  • Brush the tops of each panzerotti and the sealed egg with a little bit of egg wash to create a golden-brown finish.

Repeat

  • Follows steps above for each remaining ball of dough or until you are done.

Freezing Instructions

  • Place the assembled, uncooked panzerotti on a baking sheet lined with parchment paper.
  • Freeze them in a single layer for 2-3 hours, or until solid.
  • Once frozen, transfer them to a freezer-safe bag or airtight container, separating layers with parchment paper.
  • Label the bag with the date and contents. These will keep well in the freezer for up to 6 months, if they don’t get ate before that !
