Panzerotti are the perfect make-ahead meal for busy families! They're a delicious handheld feast loaded with gooey mozzarella, zesty pepperoni, olives, ham, or whatever toppings your family loves. Thaw the pizza dough according to instructions. Generally overnight in the fridge
Once the dough is thaw bring to room temperature by placing it on the counter for 30 minutes.
Prepare the Filling
Shed the cheese and cut up any additional toppings your family likes.
Open your homemade jar of pizza sauce (or store-bought)
Roll the Dough
Lightly flour your work space
Divide 1 ball of dough into 6 equal smaller balls- or the best size that fits your family needs.
Roll each ball to about 6-7" in diameter. Be careful not to roll the dough too thin as it might tear.
Fill the Panzerotti
Spread about 1-2 tablespoons of marinara sauce onto half of each dough circle, leaving a ½-inch border around the edge.
Add 5-6 slices of pepperoni and a generous ¼ cup of shredded mozzarella cheese on top of the sauce. Or use whatever topping you choose. Be sure not to over-fill to prevent the top from ripping.
Prepare the Egg Wash
In a small bowl, beat the egg and 1tbsp of water to create the egg wash.
Brush the inside edge of each panzerotti on the opposite side as the toppings.
Seal the Panzerotti
Fold the dough over the filling to form a semi-circle. Pinch the edges together tightly, then crimp them with a fork to seal completely.
Repeat with the remaining dough circles and filling.
Brush the tops of each panzerotti and the sealed egg with a little bit of egg wash to create a golden-brown finish.
Repeat
Follows steps above for each remaining ball of dough or until you are done.
Freezing Instructions
Place the assembled, uncooked panzerotti on a baking sheet lined with parchment paper.
Freeze them in a single layer for 2-3 hours, or until solid.
Once frozen, transfer them to a freezer-safe bag or airtight container, separating layers with parchment paper.
Label the bag with the date and contents. These will keep well in the freezer for up to 6 months, if they don't get ate before that !
Cooking Instructions
To Bake Fresh:
Preheat the oven to 400°F (200°C).
Place the prepared panzerotti on a parchment-lined baking sheet.
Bake for 5-10 minutes, or until golden brown and the cheese is bubbly.
Let cool for a few minutes before serving with extra marinara sauce on the side.
To Cook from Frozen:
Preheat the oven to 400°F (200°C).
Place the frozen panzerotti directly on a parchment-lined baking sheet (no need to thaw).
Bake for 15 minutes, or until golden brown and cooked through.
Let cool for a few minutes before serving with your favorite sauce for dipping.
Notes
Don't want marinara, no problem use BBQ sauce or a creamy garlic salad dressing. These are completely customizable.
