This one-pot sausage orecchiette pasta with broccoli is the ultimate family-friendly meal! Perfect for busy weeknights, this delicious dish comes together in 30 minutes, making it a lifesaver for any home cook. Not only is it quick and easy, but this recipe is also versatile and freezer-friendly. Make a double batch and freeze the extras when you need a homemade meal but can't cook. Simply reheat and enjoy!

Ingredients
  

  • 1 tbsp lard or oil
  • 3 cloves minced garlic
  • 1 medium onion, diced
  • 1 lb Italian sausage, thinly sliced or 1 lb of ground pork
  • 1 tsp sea salt
  • 2 cups chicken bone broth or vegetable stock
  • 1 cup heavy cream or milk but it won't be as creamy
  • 2 cups uncooked orecchiette pasta
  • 2 cups frozen broccoli
  • ¼ cup fresh grated parmesan cheese

Instructions
 

  • Melt the lard in a large Dutch oven or skillet. Add the garlic and onion. Cook for 2-3 minutes until the onion is translucent and the garlic is fragrant.
  • Add in the thinly sliced sausage or ground pork and cook until browned.
  • Sprinkle sea salt in and scrap the bottom of the pan to remove any stuck-on bits.
  • Slowly add the bone broth and heavy cream. Bring to a boil, then add the uncooked pasta. Return to a boil, then reduce to a simmer and cook for about 15 minutes before adding in the broccoli.
  • Continue to simmer until the pasta and broccoli are cooked. Once they are, remove them from the heat and top with freshly grated parmesan cheese.
    Serve and enjoy.

Notes

  • If you don’t have Orecchiette pasta you can substitute it with another pasta of your choice. Be aware that this might affect the length of cooking time.
  • Cream – Heavy cream is best but you can use a lighter cream or milk but it will make a thinner sauce.
  • This is a great freezer meal. Cook as directed above but allow to fully cool in a freezer-safe container before freezing. When you are ready to eat DO NOT THAW. Heat from frozen at 350 until bubbly and hot.
