Ingredients
  

  • 1 cup butter at room temperature
  • ½ cup roughly chopped garlic scapes
  • 1 tbsp lemon juice
  • salt and pepper to taste

Instructions
 

  • Prepare your scapes by removing the flower bulb and any woody ends. Finely dice or toss them into your food processor on high for 1-2 minutes
  • In a medium-sized bowl add butter, scapes, lemon juice and salt and pepper. Using a hand mixer or a wooden spoon mix all ingredients until they are well combined.
  • Spoon the mixture onto a piece of wax paper and roll it into a log shape. Twist the ends to seal and refrigerate for at least 1 hour to firm up.
  • Once firm, slice and serve on bread, or use to to enhance the flavor of your favorite dishes.
  • Storage: Garlic scape butter can be stored in the fridge for up to two weeks or frozen for up to three months.

Notes

Usage Ideas: Try it on grilled meats, and vegetables. Mix it into mashed potatoes or use it on a grilled cheese. The culinary possibilities are endless.
