Prepare your scapes by removing the flower bulb and any woody ends. Finely dice or toss them into your food processor on high for 1-2 minutes
In a medium-sized bowl add butter, scapes, lemon juice and salt and pepper. Using a hand mixer or a wooden spoon mix all ingredients until they are well combined.
Spoon the mixture onto a piece of wax paper and roll it into a log shape. Twist the ends to seal and refrigerate for at least 1 hour to firm up.
Once firm, slice and serve on bread, or use to to enhance the flavor of your favorite dishes.
