1quartdiced tomato and basil or 15 oz can of diced tomatoes
1quartbeef broth or chicken broth
1 cup uncooked Jasmine rice Long-grain or brown rice will take affect the cooking time
1tsp Italian seasoning
1tspsea salt
½ tsp black pepper
1 cupshredded cheeseold or mozzarella are best
Instructions
Preheat your oven to 375 °F
In a large Dutch oven or oven-safe skillet, melt the lard over medium heat. Add the garlic and onion and sauté for 2 minutes before adding the ground beef. Fully cook the ground beef.
Stir in the diced tomatoes, broth, rice and seasoning. Bring to a simmer. Stirring often.
Cover and bake in the oven for 25 minutes or until the rice is tender.
Remove from the oven, stir, top with shredded cheese, cover and return to the oven for about 5 minutes until the cheese is melted.
