By the time the kids come home from school, they’re already asking what’s for dinner about 5 times —and after a long day, the last thing anyone want is to spend hours in the kitchen or face a mountain of dishes just to make a healthy meal. That’s why I love this Quick & Easy One Pot Stuffed Pepper Casserole.

It has all the flavors of classic stuffed peppers—savory ground beef, tender rice, colorful bell peppers, and gooey melted cheese—but without the extra work. Everything comes together in just 30 minutes and in one pot, which means a hearty, healthy dinner on the table fast and only one dish to clean afterward. It’s the kind of meal that makes both kids and parents happy, and it’s quickly become one of our weeknight favorites.

Ingredients
  

  • 1 lb Ground beef or ground chicken
  • 2 tbsp lard or olive oil
  • 1 medium white onion, diced
  • 3 cloves minced garlic
  • 3 bell peppers, mixed color
  • 1 quart diced tomato and basil or 15 oz can of diced tomatoes
  • 1 quart beef broth or chicken broth
  • 1 cup uncooked Jasmine rice Long-grain or brown rice will take affect the cooking time
  • 1 tsp Italian seasoning
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 cup shredded cheese old or mozzarella are best

Instructions
 

  • Preheat your oven to 375 °F
  • In a large Dutch oven or oven-safe skillet, melt the lard over medium heat. Add the garlic and onion and sauté for 2 minutes before adding the ground beef. Fully cook the ground beef.
  • Stir in the diced tomatoes, broth, rice and seasoning. Bring to a simmer. Stirring often.
  • Cover and bake in the oven for 25 minutes or until the rice is tender.
  • Remove from the oven, stir, top with shredded cheese, cover and return to the oven for about 5 minutes until the cheese is melted.
  • Let cool for a few minutes before serving warm.
