Ingredients
  

Wet Ingredients

  • 1 egg
  • 1 ½ cups of milk
  • 2 tsp butter melted
  • splash of vanilla extract

Dry Ingredients

  • 2 cups of white spelt flour
  • 2 tsp baking powder
  • 2 tbsp Organic cane sugar
  • ½ tsp salt

Instructions
 

  • In a small bowl mix together the wet ingredients.
  • In a medium bowl mix the dry ingredients together.
  • Add the wet ingredients into the bowl of dry ingredients. Mix to incorporate being careful not to overmix. The batter will be lumpy.
  • Pour batter onto prepared frying pan or griddle in desired sizes. Flip once starts to bubble. Repeat until all batter is used up. Serve hot with your favorite toppings.

Notes

  • Make now eat later: These pancakes are great for making ahead of time and warming up when ready to eat. Let cool completely before storing in an air-tight container for up to 1 week or freeze in a single layer on a cookie sheet. Once frozen stack in a zip lock freezer bag for up to 3 months. 
  • Toppings: Sever with fresh fruit and whipped cream, maple syrup or some canned blueberry syrup for an extra special treat.
